1 cup onions, finely chopped 3 large garlic cloves, finely minced ¼ cup olive oil 2 cups vegetarian burger, frozen 1 cup walnuts, chopped 1 cup water-packed tofu, extra firm 1 cup water-packed tofu, silken ¼ cup water ¼ cup liquid aminos or "lite" soy sauce 2½ cups corn bread stuffing mix ½ cup vital wheat gluten flour
Sauté onions and garlic in oil until softened. Add burger and brown lightly. Pour into a large bowl. Stir in walnuts. Crumble extra-firm tofu and add to mixture. Combine silken tofu, water, and liquid aminos in a blender and process until creamy. Pour blended tofu mixture into burger mixture and stir until well mixed. Add the stuffing and gluten flour and mix well. Prepare a 9x13- or 10x10-inch casserole dish with olive oil cooking spray. Spread burger mixture evenly into dish and pack down gently. Bake at 350 degrees Fahrenheit for 35-40 minutes, until evenly browned. Serve with Cashew Gravy.
