Black-Eyed Pea Stew and Cornbread
| Here is a warm and hearty meal to get you through the last few weeks of chilly weather.
Black Eyed Pea Stew- 2 cups onions, chopped
- ½ cup Bell pepper, chopped
- 2 med Garlic cloves, minced
- 1 ½ cups okra, frozen sliced, thawed
- 2 cans Diced tomatoes, plain (14.5 oz each)
- 1 can Diced tomatoes, Italian (14.5 oz)
- 2 cups Vegetarian burger, canned
- 4 cups Black eyed peas, canned
In a large pot, sauté onions, peppers, and garlic in oil until tender. Add burger and fry until lightly browned. Add remaining ingredients and simmer 10 -15 minutes.
Yield: 12 cups
Jiffy Cornbread Muffins- 1 ¼ cups Yellow corn meal, fine
- 1 ¼ cups Unbleached white flour
- 4 tsp Baking powder
- ¾ cup Salt
- 1 ¼ cups Soymilk beverage, enriched
- 1/3 cup Honey
- ¼ cup Water-packed tofu, silken
- 3 Tbs oil
Combine dry ingredients in a bowl. In a blender, combine soymilk, honey, tofu, and oil and process until creamy. Pour mixture into dry ingredients (scrape blender jar as clean as possible) and stir gently until well mixed. Spoon batter evenly into a prepared heavy-duty muffin tin. Bake at 400° F for 15-18 minutes or until muffins are golden.
Variation: To make "Johnny Cake," spoon batter into a prepared 9-inch square baking dish. Bake at 350° F for 25-30 minutes or until golden brown.
Yield: 12 muffins
Yeast-Raised Cornbread- 1 cup Warm water
- 3 Tbs Honey
- 2 Tbs oil
- 2 ½ tsp Active dry yeast
- 1 ½ cup unbleached white flour
- ¾ cup Yellow cornmeal, fine
- 3 Tbs Soymilk powder, plain
- 1 tsp Salt
- Non-stick cooking spray
Combine water, honey, oil, and yeast. Let stand 3 minutes. Stir in remaining ingredients and mix well. Pour into an 8-inch square pan prepared with non-stick cooking spray. Let rise 30 minutes or until double. Bake at 350° F for 25-30 minutes or until golden brown. Cool 10 minutes before trying to remove cornbread from pan.
Variation: For "quick cornbread," replace yeast with 1 Tbs non-aluminum baking powder. Reduce salt to ½ tsp. Bake at 375° F for 20-25 minutes or until golden brown.
Yield: 8-inch square
